Steps to make Cajun Gumbo:
- Make Roux by mixing the Flour with the Oil. Stir constantly over Med. heat until copper color appears.
- Make Chicken Stock by adding the Chicken and Chicken Bouillion Granules to a pot of water and boil until cooked.
- Cook Okra down with a little Oil. Mash to pieces and continue to fry down.
- Add Stock to Roux. Add Water, Onions, and Celery; stirring constantly. (Add cold water for hot Roux; hot water for cold Roux). The Stock/Water level should be more than 1/2 way. Add Tony’s, Chicken, Sausage, Okra and sprinkle of Red Pepper. Cook for about 30-35 minutes. Add Shrimp, Crab, & Oyster when Gumbo is done. Top with Green Onions and Filet. Serve with Rice.
