  1. Prepare 3 tbsp butter
  2. Get 4 medium carrots, diced
  3. Get 1 packages frozen pepper stir fry
  4. Take 2 clove garlic, minced
  5. Take 1/2 lb bacon, chopped
  6. Make ready 3 tbsp flour
  7. Take 4 cup chicken broth
  8. Take 4 medium potatoes, chopped
  9. Get 1 lb chicken breast, cooked and chopped
  10. Take 1 lb frozen whole kernel corn
  11. Take 1 cup heavy cream
  12. Get 1 salt and pepper to taste
  13. Prepare 1 Tony Chacheres, to taste
Steps to make Chicken and Corn Chowder:
  1. Melt butter in large heavy bottom pan. (I use a cast iron dutch oven)
  2. Saute carrots until partially soft.
  3. Add pepper stir fry. Saute until onion is translucent and peppers are soft.
  4. Add bacon and cook until fat is rendered.
  5. Add garlic. Saute 1 minute.
  6. Add flour and stir to a thick paste. Add oil if to thick. Add more flour if too thin. Cook 2 minutes, stirring constantly.
  7. Stir in chicken broth.
  8. Add chicken, corn, salt and pepper.
  9. Simmer about 30 minutes, stirring occasionally.
  10. Stir in heavy cream. Do not allow to return to simmer.
  11. Top bowls with Tony’s to taste.
  12. Ready to serve and ENJOY!
