- Slice the chicken, place a large deep frying pan on the hob on a medium heat! Throw in the chicken turning regularly so it cooks on all sides and goes nice and golden.
- Meanwhile slice the onion, throw that in the pan and stir.
- Chop the chorizo and and garlic, throw that into and stir again.
- Slice the red pepper and courgette too, add this to the pan, stirring well.
- Add the herbs and spices and tinned tomatoes keep on frying well!
- Stir well add the rice coating it with all the ingredients then add the stock. Make sure all the grains are covered then add a lid! Turn down the heat to a low to medium setting. Cook for approximately 30 - 40 minutes depending on when the grains are soft and the liquid is absorbed! About 10 minutes towards the end check it’s not burning!
- If need be add a bit more water to it if it’s grainy but not much liquid!
