  1. Preheat oven to 180C
  2. Dice onion
  3. Heat olive oil in a large pan or dutch oven. Add onion and cook until translucent
  4. Add chicken, cumin, cayenne pepper and black pepper.
  5. Stir in drained tomatoes, saving the liquid. Cook for 5 minutes, or until liquid has mostly evaporated.
  6. Stir in quinoa and water. Cover and bring to a boil.
  7. Reduce heat and simmer for 20 minutes, or until quinoa is tender. Stir in the cheese.
  8. Remove the tops, ribs, and seeds of the bell peppers.
  9. Pour liquid from the tomatoes into a baking dish.
  10. Fill each bell pepper with the mix and top with more cheese.
  11. Place in baking dish upright and cover with foil.
  12. Bake for 40 minutes and remove foil. Bake for a further 10-20 minutes
  13. Ready to serve and ENJOY!
