  1. Make ready 2 LBS Chicken (light or dark meat)
  2. Prepare 1 Poblano Pepper
  3. Take 1 Sweet Onion
  4. Make ready 1 can Green Chiles
  5. Prepare 1 can Diced Tomatoes
  6. Take 2-3 Cloves Garlic
  7. Prepare 1 large can Green Enchilada Sauce
  8. Get 2 cups Half and Half -OR- 2 cups whole milk and 1 stick of butter
  9. Make ready 4-6 cups water
  10. Take 2 TBS Cumin
  11. Get 1 tsp pepper
  12. Prepare 1 tsp salt
  13. Prepare 1-2 TBS McCormick Chipotle Seasoning
  14. Take 4 cups uncooked rice
  15. Prepare 8 cups water
Steps to make Enchilada Soup:
  1. Roast poblano pepper in a pan or over flame until charred, deseed and clean off charred sections. In a casserole pot or Dutch oven add chicken, poblano pepper, onion, green chilies, diced tomatoes, garlic, enchilada sauce, water, (butter), and seasonings. Cook until chicken is tender and easy to tear. Remove chicken and shred it. With a hand mixer, mix all of the other ingredients in the pot until liquefied. Add the chicken, liquid from pot and Half & Half (or whole milk) to crock pot.
  2. Let it simmer on low for a couple of hours. Cook rice. Serve over rice Yields 8-10 servings.
  3. Ready to serve and ENJOY!
