- Heat oil in a shallow wide pan. Add cardamom pods, mustard seeds and cinnamon stick. Heat until seeds start popping.
- Add finely sliced onions. Cook until onions soften and turn translucent.
- Add 5 tablespoons of water and allow to sizzle.
- Add mix of chilli, coriander and turmeric powders. Mix well until slightly dry.
- Place chicken on bottom of pan and fry on both sides.
- Add water and mix. Leave to cook for 10 minutes.
- Add seasoning chicken cubes and curry leaves. Leave to cook on slow heat until done.
