  2. Add the chicken and uncooked rice, cook for 2 minutes and then add the stock and bring to boil.
  3. Lower the heat, cover and cook for 8 - 10 minutes until the rice is just cooked. Mix constantly.
  4. During the final 3 minutes of cooking, add the edamame beans.
  5. Pour into bowl, and sprinkle coriander leaves on top.
  6. Optional: Serve with a Dollop of Greek Yogurt.
